Lemon Scones!


April is my favorite time of the year. It's a month full of blooming dogwoods, azaeleas, and numerous other plants in North Carolina. Dusk creeps upon us slower than before, allowing us to spend more time with the sun. The air is warm, saturated with the sweet fragrances of the colorful flowers. Spring fills my soul with joy, hope, and happiness. During the season of spring, I enjoy baking even more than usual. Today, I was inspired to bake one of my favorite desserts, lemon scones. A few months ago, I was having tea at a tea parlor in a quaint, secluded, small village. There, I stumbled across a cookbook called, Scones and Tea. I had to buy it! As I flipped through the book, I found a recipe for lemon scones called, the Ruby Pear Tea Parlor's Lemon Scones. I've prepared these scones several times, and they are a hit with everyone! Whether you enjoy tea time refreshments or not, I guarantee you will fall madly in love with these scones! 

For the Scones...
-6 cups of self-rising flour
-1 cup of sugar
-2 tbsp. fresh lemon zest
-1 cup salted butter
-2 cups of milk
-1 tbsp. lemon extract

For the Glaze...
-4 cups of confectioners' sugar
-1/4 cup of butter
-1 tbsp. fresh lemon zest
-2 tsp. lemon extract
-1/4 cup milk ( or more, depending on  the consistency you desire.)

* Preheat the oven to 350 degrees Farenheight 



Combine flour, sugar, and lemon zest.

Using a pastry blender , cut into flour mixture until mixture resembles coarse crumbs. ( I don't have a pastry blender, so I just used my food processor and pulsed the mixture until it resembles coarse crumbs.) :D

Make a well in the center.

Add the milk and lemon extract.

Mix just until combined.

Pat dough out.

Cut scones with a cutter. ( I used a cup. ) :D
Place on a baking sheet covered with parchment paper. Bake for approximately 13 minutes.

Place scones on a cooling rack.
For the glaze, combine all the ingredients in a bowl, and mix them together with an electric mixer.
To apply the glaze, I put tinfoil under the cooling rack, and spooned the glaze over each scone!

Arrange on hand painted plates! :)
